What"s the correct way to say "Bon Apetit!" in Spanish?

The right way to say 'Bon Apetit!' in Spanish is:
"¡Buen provecho!"
or
"¡Que aproveche!"
however I found out that the expression "¡Buen provecho!" is more used in Mexico and Latin America.
In Spanish we use 2 exclamation marks as you have put it, one to open the sentence (¡) and one to close it (!).
