The most reliable figures on the most dangerous jobs are collected in the US. You can see a list of the top 10 most dangerous jobs there, based on the average yearly mortality figures and injury rates. Statistics like these put fishing, especially sea fishing, at the top of the list, and not far behind are industries like oil extraction, mining and construction (especially roofing). Pilots also have a dangerous job, and surprisingly to some, farming is also well into the top 10, because of the risk of injury from both animals and machinery. Truck driving is also very risky - maybe not surprising if you think how many driving related deaths there are every year.

However, we only tend to collect statistics like these in rich countries where there are safety standards in place. In poor countries and those with little or no regulation, the death toll is likely to be much higher, but figures are also less likely to be accurate.
