You can say 我想把旅行支票换成现金 -- wǒ xiǎng bǎ lǚ xíng zhī piào huàn chéng xiàn jīn
旅行支票 (lǚ xíng zhī piào) means travellers check
现金 (xiàn jīn) means cash
把 (bǎ) xx 换成 (huàn chéng) xxx means 'change xxx into xxx'.
